The best food is the kind that's served inside other food... Instead of scooping out the pineapple, I cut it into strips, did a quick marinade (butter, hot sauce, and honey), grilled it, and cut it into bite size pieces to add to the chicken and rice in the end (also added green onions to the rice after it was cooked).
